A salad a day


I started out the New Year with the resolve to eat a salad every day.  I did pretty well, but started slipping in late January and fell off the wagon in February.  I loooove to make salads and love eating them even more, so restarted yesterday with the above chopped salad.

I don't often make chopped salads, because I much prefer baby greens, particularly arugula, but I got a hankerin' for chopped salad yesterday ...

one romaine heart, chopped
thinly sliced red onion
vegan bacon (LOVE)
chopped roasted chicken (beer can chicken from this weekend!)
gorgonzola
cilantro lime dressing

It disappeared very quickly.  :)  I'm chronicling my salad a day campaign and will share the recipes for the best that I come up here on my blog.

Yay! Here's to going to the dark, err, light side!

I'll probably go with arugula tomorrow (maybe even tonight ....) - I could eat it three meals a day!

I love salad too! Really, I think I need to have a stock pile of recipes one for each day for the warm weather (and a soup recipe for each cold day) for a month. That would be some wonderful organization. :)

A good salad is my favorite meal ever!

I have several go-to versions, but the best are:

spinich, clementines, almond slivers, shallots, basalmic vinagrette dressing.

mesclun green, blue cheese, figs, dried cranberries, red onions, basalmic dressing

Those sound DIVINE Cassie! I hadn't thought of figs in my salad ... hmmm ... that's sounding super delish!
